View Full Version : Yummy recipe for low-carbers and everyone else!

Heroin wings: (called this because they are so freakin' addictive!)

4 pounds of chicken wings (cut the wings into drumsticks...save the tips in the freezer for soup stock.)
1 cup grated parmesan cheese
2 TBLS. dried parsley
1 TBLS. dried oregano
2 tsp. paprika
1 tsp. salt
1/2 tsp. pepper
1/2 cup butter (not margarine)

Preheat the oven to 350 degrees.

Combine parmesan cheese, parsley, oregano, paprika, salt, and pepper in a bowl.

Line a shallow baking pan with foil.

Melt the butter in a shallow bowl or pan.

Dip each drumstick in butter, then roll in the cheese/seasoning mixture and place on baking pan.

Bake for one hour, and then kick yourself for not having made a double recipe.

Yield: About 50 wings, each with only trace amounts of carbohydrate and trace fiber. About 4 grams of protein each.

They are yummalicious!

Those sound delicious. I'll have to show that recipe to my mom who is on the Atkins diet.

I highly recommend the book:
"500 Low-Carb Recipes" by Dana Carpender

There are so many kickin' recipes in there, and everything has the carb counts/serving sizes already figured out for you.

I also subscribe to her newsletter called "Hold the Toast - a low-carb ezine"

She wrote a book that set me down the pathof low-carbing, called: "How I gave up my low-fat diet and lost 40 pounds"
After reading that, I was so convinced because I had followed low fat for so long and kept adding 5 or 10 pounds a year...it sucked! Then within a month of starting low-carb, my jeans would barely stay up anymore! LOL

Spinach-Stuffed Flank Steak

1 10oz. package frozen, chopped Spinach, thawed
1 16 oz Flank Steak, trimmed
6oz. cream cheese, softened
1 teaspoon seasoned salt
1 10 1/2 oz. can beef broth
1/2 cup cooking burgundy or red wine vinegar

Step 1. Drain the spinach in a colander. Press the excess moisture from the spinach.

Step 2. Preheat the oven to 350 degrees

Step 3. Pound the meat with a meat mallet on a hard surface to 1/4" thickness. (You can usually get this already done at the meat market or grocery store)

Step 4. Combine the cream cheese and seasoned salt in a small bowl and mix well. Spread the cream cheese mixture over the steak. Spread the spinach evenly over the cream cheese mixture.

Step 5. Roll the steak to enclose the filling. Secure with toothpicks. Place seam side down in a roasting pan.

Step 6. Combine broth and burgundy (red-wine vinegar) in a small bowl and mix well. Pour 2/3 of broth mixture over the steak roll. Roast, basting occasionally with remaining broth mixture for about 45 minutes. Cut into 1-inch slices. Serve with pan juice.

Anyone a couscous fan? I have a few neat dishes I make with it that are low fat and super healthy.

I use to eat couscous a couple of times a week, either in a hot dish or cooked and in a chilled sald type dish...but that was when I did the whole low-fat thing. Now, for me, couscous are a no's no's!

But they are really good!

I did the same thing for almost three years. My wife had me on a low fat diet. She made tons of stuff with hardly any fat but I still gained weight. Then I found out that I had type 2 diabetes. I like to kid my wife that she was trying to kill me for the life insurance with that low fat diet.

My mom had type II diabetes and tried for years to lose weight on a low-fat diet...unsuccessfully.

If she were still with us, I know she would have had great success both with her weight and with her overall health following a low-carbohydrate way of life.
